Ingredients
  

  • 6 cups cubed watermelon (about half of a full watermelon)
  • 2 cups cubed English cucumber (about 1 whole cucumber)
  • 2 green onions, finely chopped
  • 1/2 cup crumbled feta cheese, divided
  • 1/4 cup finely chopped and packed fresh mint, divided
  • 2 Tbsp finely chopped and packed fresh basil
  • zest of one lime
  • 1 Tbsp fresh lime juice
  • 2 avocados, peeled and sliced
  • 1/2 cup chopped pistachios

Instructions
 

  • Add the watermelon, cucumber, green onions, half of the feta, half of the mint and the basil to a large bowl. Sprinkle with the lime zest and lime juice, then gently toss to combine.
  • Transfer the salad to a serving dish and top with avocado slices, pistachios, the remaining feta and mint. Refrigerate for 15-30 minutes to let the flavours meld, then serve chilled.

Notes
