Bright, fresh, and bursting with summer flavour, this watermelon and feta salad is the perfect quick and easy dish for warm-weather days. Juicy watermelon, creamy avocado, salty feta, crunchy pistachios and fragrant fresh herbs come together with zesty lime for a refreshing balance of sweet, savoury and tangy.
6cupscubed watermelon (about half of a full watermelon)
2cupscubed English cucumber (about 1 whole cucumber)
2green onions, finely chopped
1/2cupcrumbled feta cheese, divided
1/4 cupfinely chopped and packed fresh mint, divided
2Tbspfinely chopped and packed fresh basil
zest of one lime
1Tbspfresh lime juice
2avocados, peeled and sliced
1/2cupchopped pistachios
Instructions
Add the watermelon, cucumber, green onions, half of the feta, half of the mint and the basil to a large bowl. Sprinkle with the lime zest and lime juice, then gently toss to combine.
Transfer the salad to a serving dish and top with avocado slices, pistachios, the remaining feta and mint. Refrigerate for 15-30 minutes to let the flavours meld, then serve chilled.
Notes
