Ingredients
  

  • 2 tsp sesame oil
  • 454gr/1lb lean ground beef
  • 1/4 cup soy sauce
  • 3 Tbsp brown sugar, packed
  • 3 cloves garlic, minced
  • 1” piece fresh ginger, minced
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup water

To serve:

  • 4 servings cooked rice
  • 1/4 cup chopped green onions
  • 1 cup shredded carrots
  • 1 cup chopped cucumbers
  • Sesame seeds
  • Kimchi

Instructions
 

  • In a small bowl, whisk together the soy sauce, brown sugar, garlic, ginger, red pepper flakes (if using) and water. Set the sauce aside.
  • Heat the sesame oil in a skillet over medium-high heat. Add the ground beef and cook, stirring frequently and breaking the beef into small pieces, until cooked through. Spoon off any accumulated fat in the pan and discard. Pour the prepared sauce over the cooked beef and reduce the heat to medium. Gently simmer the meat in the sauce for 1-2 minutes, until sauce is slightly reduced and thickened.
  • Add a serving of the cooked rice to each of 4 bowls. Divide the beef mixture amongst the bowls. Top each bowl with some of the carrots and cucumbers. Scatter some green onions and sesame seeds over each bowl. Serve immediately with kimchi on the side.

  • Leftovers can be stored in covered containers in the fridge for up to 3 days.  
  • Korean Beef Bowls also make a great packed lunch.  In a microwave-safe container, pack the rice and beef.  Pack the vegetables and kimchi in separate containers.  Warm the rice and beef before eating, then top with the vegetables and kimchi.
