What Goes in White Chocolate and Cranberry Trail Mix?

 

  • Raw Almonds and Cashews:  Full of healthy fats and nutrients, almonds and cashews are excellent sources of protein and energy.  Buying them raw will give them slightly softer texture than roasted nuts, but they won’t have lost any of their nutrients to the roasting process.  Commercially roasted nuts are often coated in extra oils and doused in salt, so look for raw, unsalted almonds and cashews for the healthiest version of this trail mix.
  • Raw Pumpkin Seeds:  Also known as Pepitas, these little seeds are nutritional powerhouses.  Look for raw, unsalted pumpkin seeds.
  • Sea Salt:  Commercial trail mixes are often coated in poor quality salt (and oil to make the salt stick to the nuts).  In this healthier trail mix, just a pinch of sea salt enhances the flavours of the nuts and seeds.  No, it won’t stick to the nuts in the same way it would if the cashews and almonds were coated in oil, but a quick shake of the jar before serving will redistribute everything.
  • Dried Cranberries:  Dried fruit adds chewiness and a little sweetness to trail mix.  Dried cranberries are the perfect mix of tart with just a little sweetness, which perfectly offsets the richness of the nuts and seeds.
  • White Chocolate Chips:  Trail Mix needs a little something special in and amongst the healthy things!  This White Chocolate and Cranberry Trail Mix is delightfully addictive, in large part because it is a pleasing mix of contrasting textures and flavours.  White chocolate chips add both sweetness to offset the tartness of the cranberries and a creaminess to offset the crunch of the nuts.

Ingredients
  

  • 1 cup raw almonds
  • 1 cup raw cashews
  • 1 cup pumpkin seeds (pepitas)
  • pinch of fine sea salt
  • 1/2 cup sweetened dried cranberries (such as Craisins)
  • 1/2 cup white chocolate chips

Instructions
 

  • In a mixing bowl, combine the almonds, cashews and pumpkin seeds. Sprinkle with a pinch of fine sea salt and toss to combine. Add the dried cranberries and white chocolate chips and toss again, Transfer to a sealed container and store at room temperature for up to 2 months.
