These easy marinated cherry tomatoes are a simple, flavourful way to enjoy summer’s freshest tomatoes. Tossed with everyday pantry staples, they come together in minutes and make the perfect side dish or topping for crusty bread, salads, pasta, grilled meats or a summer appetizer spread.
In the bottom of a large mixing bowl, whisk together the olive oil, vinegar, garlic, herbs and salt. Add the halved cherry tomatoes to the marinade, and toss gently to coat. Taste and add more salt if needed. Cover and let rest for at least 30 minutes. Can be made up to 24 hours in advance. Store in a covered container in the fridge and serve at room temperature.
Notes
Any type of small, summer-fresh tomato will work for this recipe.
Red wine, white wine and apple cider vinegar are all good options. Lemon juice is also a good choice for adding zippy acidity to sweet tomatoes.
Herbs provide endless variations on this recipe. Parsley, thyme, basil and/or chives are all good options. Stronger tasting herbs such as oregano, tarragon and rosemary are also delicious, but should be combined with milder herbs such as parsley so they don’t overpower the sweet tomatoes.
