Crostini are the most versatile and easiest appetizer you can make with almost nothing on hand - just bread, olive oil, and a hot oven or grill, and in under 15 minutes you have got crisp, golden bites ready for topping.
Place a rack in the centre of the oven and preheat to 400F.
Slice the baguette on the diagonal into 1/2” thick pieces. Lightly brush both sides of each slice with the olive oil. Place the slices in a single layer on a large baking sheet. Bake for about 10 minutes, until crisp and lightly golden. Sprinkle crostini with salt and rub each slice with a cut side of the garlic clove (if using). Transfer to a serving plate and use in place of crackers or fresh bread with dips and spreads.
How To Grill Crostini
Brush the sliced baguette with the olive oil as directed above. Preheat grill to medium. Using tongs, place slices directly on the grill. Cover the grill and let the bread toast for a minute or two. When the undersides are golden with a few grill marks, flip the slices using the tongs and repeat on the other side. Remove from grill, sprinkle with salt and rub with the garlic clove (if using). Serve as desired.
Notes
These crostini are best used immediately, if you’ve rubbed them with garlic. To make ahead, omit the garlic step and store the crostini in an airtight container at room temperature for up to 2 days, or freeze for up to 1 month. Crostini can be rubbed with garlic just before serving for the freshest taste.
