This Sparkling Blackberry Blush Cocktail is the perfect bubbly drink for spring brunches, Easter, Mother’s Day, bridal showers or any day that calls for a celebration!
Thread 2 blackberries onto each of the cocktail picks and set aside.
Place the remaining 4 blackberries, lemon juice and simple syrup in a cocktail shaker. Add ice cubes and shake vigorously to combine and chill the ingredients, and to smash the blackberries. Strain the mixture through a fine mesh sieve, dividing it evenly between 2 coupe glasses or champagne flutes. Top each glass with Prosecco, stir gently and garnish with the reserved blackberries.

This recipe makes 2 drinks but can easily be doubled or tripled for a bigger crowd.
Non-drinkers and kids often love a pretty mocktail. To make a non-alcoholic version, replace the simple syrup in the recipe with water. Pour the mixture into glasses and top with ginger ale or lemon-lime soda. Garnish with a cocktail pick of blackberries.
